 MAMA’S KITCHEN

Would be a cookbook title
If we weren’t talking about
Someone who’s epitaph was
‘Hey, she kept us alive’
She was an indifferent cook
Like her mama before her,
Someone who specialized
In Thanksgiving aspic
And over-salted ham,
And a dozen varietals
of tomato rice
And fried Spam
And yes, sweet and sour
And pizza from the neighborhood
Filipino place, and salad,
Salad as if we were part cow.
